Low-carb Mango w/Hint of Blueberry Frozen Yogurt

I got the inspiration for this recipe from Lauren at Healthy Food for Living.  I wanted to change a couple things because I wanted to use Splenda and also I added some no sugar added blueberry jam.

Ingredients:
2 cups chopped mango
1.5 cups Greek yogurt
1/3 to 1/2 cup Splenda, to your taste
1/4 teaspoon vanilla
1/2 tablespoon vodka
2 heaping spoonfuls of no sugar added blueberry jam

  1. Blend chopped mango in a food processor first to get it really smooth
  2. Add everything else (check your sweetness and taste test) and blend until smooth
  3. Pour into a glass bowl and cover
  4. Place in the freezer until ripened

The vodka is used to keep the yogurt slightly soft so it doesn't become too hard to scoop from the bowl.  Brilliant.

AWESOME PIZZA!!!

I just made one of the delicious things I have ever eaten!  Since I am low-carbing for my DS, I really don't get to eat pizza often. Plus the crust fills me up so much and I actually am not one of the ones who like to just eat the topping.  I have really been missing vegetables lately, so this was really satisfying.

Feel free to change to suit your carb/protein needs.

Ingrediants:
  • 2 flatbread Flat-out Multi-grain W/flax
  • 8 tbsp Tomato Paste 
  • 2 tbsp chopped Sun-dried Tomatoes In Herb Oil
  • 1/2 cup Frigo Whole Milk Ricotta
  • 1/2 medium Yellow Onion
  • 1 medium Zucchini (raw)
  • 1 medium raw Green-bell Pepper
  • 1/2 cup 3 Cheese Italian
  • 4 tablespoons parmesan cheese, shreded
  • 2 tbsp Olive Oil or butter
I think if you don't want to deal with the sundried tomatoes and tomato paste, use pizza sauce instead.


Prep vegetables:
  • Chop zucchini, onion, and green pepper into 1/4 inch pieces. 
  • Sweat onion in a pan with a little water for about 2 minutes. 
  • Add green pepper and zucchini then gently sitrfry unti they are soft.


Prep flatouts:
  • Cut Flatouts in half 
  • Spoon about 2 tablespoons tomato paste on each half of flatout


  • Sprinkle half tablespoon sun dried tomato on each
  • Evenly drop pieces of ricotta over each slice


Assembling - for all 4 halves, do the following:
  • Heat a pan with 1/2 tablesppon oil or butter on medium
  • Add flatbreat to the pan
  • Immediately add 1/4th heated vegetables


  • Sprinkle with cheeses


  • Cover with lid and heat until flatbreat is crispy and cheese melts
  • Eat!

10 1/2 months post op

Whoo! Down 80 lbs! It definetly has not been easy.... Not doing a very good job of taking my vitamins and not drinkin protein shakes.  I have been doing pretty good not eating carbs, at least until the holdidays got here. Sigh.

So happy the holidays are almost over. I find the whole thing contrived and depressing.

For some reason typing takes away any creative thought I had and writing anything I was thinking about earlier is now just a boring sentance. Fuck it.

Work shoes

Yesterday, I walked from the bus to the beach in my pretty comfy (and pretty cute) black Clark's sandals.  The 6 blocks or so was on sidewalk and no harm came to my shoes. Everyone was walking around in their beach wear, but I was in my light weight work clothes which in reality are very comfortable even in the heat.  I don't have a lot of work clothes and don't have a desire to shop often, so I try to take care of what I have.

When I got to the boundary between sidewalk and sand, I tried to look as far left as I could looking for more distance to cover on paved path/ The alternative was to remove my sandals and roll up my pants, but the possibility of getting hit by a wave on the narrow sand strip was high.  Success! An outdoor bar to cut through.

A few minutes later after winding though a hotel pool area I reached the particular swimming area where my son and husband were.  They had a backpack with my swim gear, but it really wasn't that warm and sincerely I wanted to just go eat. Plus I didn't want to risk my shoes and I didn't feel like taking them off.



After some drama with my son's shirt and not wanting to go into a sit-down place all sticky and sandy from the ocean, we ended up at the Hard Rock Cafe - some great food and a decent tiny band.  All was well and shoes and outfit made it home safely.

This morning on the way to the bus, checking the bus arrival times via cell phone while I walked, some type of red, sticky, gritty nastiness gets up under my toes and all over the front of my shoes.  I have no idea where it came from, what it is, or how by the time I got to work it was literally covering my toes and shoes.

I would have rather ruined them in the beautiful sand than be sitting here with I-don't-even-want-to-know-what all over my feet. Lesson learned.

3 months post op!

I didn't update for a loooooong time.  Doing good!  I am down 51 lbs all together.  I am finally able to get into some of my old clothes, so glad.  I move to Hawaii a couple weeks ago, and that has been a great boost to my health.  I'm getting a lot more exercise and getting out and about.
