Brok’s pizza

Ok, not sure if I loved it.  I think I didn’t cook the crust long enough.



Brok's Low Carb Pizza Recipe

  • 8 ounces mozzarella cheese, shredded
  • 4 ounces cheddar cheese, shredded
  • 3 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon basil, optional
  • Toppings of your choice *

Mix the cheeses, eggs, garlic powder and ...basil well. Line a 16-inch pizza pan with parchment paper or nonstick foil. Evenly spread the cheese mixture in the pan, almost to the edge, making it as thin as possible. Bake at 450º 15-20 minutes until golden brown. I suggest checking it after about 10 minutes. If it's getting very dark on the edges and top, turn the oven down to 400º and continue baking until brown all over and no longer pale on the bottom. Pat off any excess grease then add your toppings. Keeping the oven rack in the center position, put the pizza under the broiler until the toppings are hot and any cheese you added is melted and bubbly, about 4-5 minutes.

Sometimes I hate facebook

I hate it because I am stuck with friends I don’t want.  I really wish I had different personas in each – for instance, I’d really like to talk about my surgery but I don’t want my co-workers to know. 

Having WLS a second time is a pretty humiliating thing.  I am really trying ( and I think succeeding ) in overcoming the stigma.  I know the pain of dieting day after day, week after week, month after month, and hardly have the scale move.  Just when I think I am doing my best, nothing happens.  It is really discouraging.  I love food, all food, and it is truly hard to constantly measure and monitor what I eat in addition to eating food I don’t really love.  I am always looking for good food that is naturally low in calories and fat because the substitutions are horrible ( like salad dressing, cheese, sweets ).  I am not fond of imitation flavors, but I can tolerate splenda in some amounts.  The other thing is my gut is killing me!  No carbs in my diet lead to stomach pain day after day.  Today, I decided to have a carb day once per week. We shall see what happens….

Still trying to lose some weight before I meet with the Dr Feb 4th.  My liquid diet starts Feb 5th. That I am not looking forward to.

Had an AWESOME event happen yesterday.  I feel I have a couple big issues in my life that are about to be completed, and yesterday one of them happened.  I think life is going to change drastically....

  • Italian mix herbs
  • Garlic
  • Salt and pepper

  • Cauliflower
  • Ricotta
  • Cream
  • Italian blend shredded cheese

Artichoke Dip

You will need:

•8 oz. Cream Cheese, warmed in the microwave for 2 minutes on 50% heat to soften it – (Even if you’re making your dip in the oven, pre-microwaving the cream cheese will help you mix it with the other ingredients, so I recommend not skipping this step.)
•About a cup of chopped spinach (either fresh, cooked, or frozen, thawed)
•2 cans or jars of non-marinated artichoke hearts, roughly chopped
•Garlic salt
•Chili powder – be generous! The cream cheese and sour cream will act to “cool” the dip, so you can sprinkle away with the chili!
•A handful of shredded mozzarella cheese

Mix all ingredients in a baking dish, and sprinkle on a bit more mozzarella, then broil until the cheese is browned.

Eating with baked cheese and pepperoni.

Ok, not road trip after all. But other stuff happened!

So, we didn't road trip. We ended up moving back to our house. 

But the most important thing lately is invesigating revision surgery to go from lapband to DS. So obsessed with it.  CAN NOT WAIT.
